Ingredients
  • 3 cup boiled chickpea
  • 1 1/2 cup boiled wheat berry
  • 1/2 cup mint (roughly chopped)
  • 1 cup parsley (roughly chopped)
  • 1 red onion (sliced or chopped)
  • 2 medium-sized cucumbers (diced or sliced)
  • 1/2 cup almond (whole or roughly chopped)
  • 4 tbsp olive oil
  • 2 tbsp tahini
  • 1 tbsp honey
  • 1 lemon juice (freshly squeezed)
  • 1/4 tsp salt
  • 1/4 tsp pepper
Instructions

    Add the olive oil, lemon juice, tahini, honey, salt, and pepper in a jar. Close the jar with a lid and shake it until you get a homogenous dressing.

    Add boiled chickpea and wheat berry, chopped mint and parsley, diced cucumber, and  almonds to the large bowl and gently mix them.
